Is there a way to monitor their watch history or get notified about what they’re viewing without them knowing I’m checking?

For YouTube, the best “reliable” route is a supervised Google account with Family Link + YouTube supervision so you can see activity and set limits (and they can’t just wipe everything quietly). If history keeps getting cleared, a solid parental control app can also log YouTube usage and send alerts—saved my sanity with my teens!!
